Nanaimo Bars


Ingredients:
bottom layer:

1/2 cup cocoa 2 cups coconut
1 cup butter 1 cup chopped walnuts
1/2 cup white sugar 4 cups graham crumbs
2 eggs
1 tsp vanilla



middle layer

1 cup butter 4 tbsp milk
4 cups icing sugar 4 tbsp vanilla custard powder



top layer

6 squares semi-sweet chocolate
2 tbsp butter



Directions:
bottom layer
mix together cocoa, butter, sugar, eggs and vanilla in double boiler, heat till thick do not overcook. Add to the crumbs nuts and coconut mix well and press into a wax paper lined 9 by 12 inch baking pan. I use a rolling pin to get it nice and flat. Work while the stuff is still warm.

middle layer

beat butter adding icing sugar and the milk custard mixture alternatively until smooth spread over bottom layer. I warm a metal spatula to get it really smooth.

top layer
heat and melt in a double boiler spread over last layer. You have to work fast while the chocolate is still warm.


Let the whole thing set then cut into squares you will need a very thing sharp knife to make precision cuts. I lift the whole thing out of the pan and put on a large cutting board

  2. I know what custard is - but I don't think I've ever seen "custard powder" in any US grocery store....so I guess no nanaimo bars for me.

  3. OMG! Custard Powder! There is a whole section in UK grocery stores dedicated to this stuff. Its called Birds I think. Custard in any form possible! It think custard is disgusting...Yuk! But the recipe sounds gggreat!

  4. I am sure there is custard powder you just haven't looked for it. Try the baking aisle. The great thing about Nanaimo Bars is all the butter in it, I can feel my arteries hardening just making it...

  6. Ok, so the custard powder thing is answered. now, what is frosting sugar. is it the same as regular sugar or is it powdered sugar. I want to make these, but i will be leaving out the coconut. oh gag.

  9. I have no idea as it is so readily available here. Bird's Custard Powder is made by Kraft. the listed ingrediants are Corn Starch,salt, colour (contains tartrazine), artificial flavour(k002B)

  10. I just called Cost Plus, and they carry it. Im gonna get me some and try these bars out. its 4.25 a can here. woo hoo. these look yummy.

  11. I made these for John and he liked them. he said they are really rich though and cant eat more than one or two at a time. I gave more than half the pan to a friend, John could never eat the whole thing. they loved it also, but said it was really rich. I really hate coconut, so i never even tasted it. but now i have a can of custard for me to make.

  12. Custard is yummy and a staple here in the UK with winter puddings! I also love it warm over a sliced banana. But I'm definately making these, if you can tell me what grahams crumbs are!!!!
